A warm welcome to authors K.A. Merikan joining us today to talk about their new release “I Love You More Than Pierogi”.
We’ve been thinking about setting a book in our native Poland for quite some time now, and the submission call for “World of Love” helped us come up with an angle 🙂 The two main characters are former high school sweethearts who meet after several years, and after the bitterness that resulted of their breakup, the reconnection is everything but smooth. Through those characters we explored two conflicting feelings many immigrants face – the longing for home and everything it stands for, and the unstoppable curiosity that pushes them to explore. Who knows, maybe one doesn’t have to choose 😉

Because I Love You More than Pierogi revolves around food so much, we decided to share a recipe, tested and tasted by us 😀 Cold beet soup is a summer classic in Poland. While fruit-based soups (basically, cooked fruit with noodles) are a favorite in warm months, this more savory way to have a nutritious meal without overheating is clearly superior ;p Plus, it has the most vibrant color!
Ingredients:
- 1 package of chards, finely chopped
- 4 small beets, chopped
- 1 package of radishes, grated
- 1 package of dill, finely chopped
- 1 cucumber, grated
- 3 gherkins, grated
- 1 liter kefir, buttermilk, or yoghurt
- 2 cloves of garlic, pressed or finely chopped
- Salt and pepper
- Juice of 1 lemon
- 1 hard-boiled egg
Directions:
Add the beets and chard into a pot and cover with water. Bring to a boil and cook for 5 minutes. Pour the soup into a large bowl and leave to cool down.
Add gherkins, cucumber, and radishes. Stir, then add the garlic, lemon juice, salt, pepper, and dill. Stir once more and pour in the kefir. This is when this vibrant violet color should appear.
Cool the soup further and serve it with a hard-boiled egg.
